Maamoul معمول are small shortbread pastries filled with dates, pistachios or walnuts ,very popular in Palestine, Jordan, Syria, Lebanon, and other Levantine countries..People keeps a stock of them all year round, but they are particularly used on religious festivals. Muslims eat them at night during Ramadan and on the Eid al-Fitr and Eid al-Adha holidays, Arab Christians eat them in the days before Lent, on Easter Sunday and on the feast of Epiphany. Take the dough out of the fridge. If the dough is too hard, allow to rest at room temperature for 30-60 minutes. Add flour, cornstarch, powdered sugar, salt and baking powder. Mix until combined. 3. Add milk, vanilla extract, rose water and mix until dough forms. Cover and let rest for 1 hour. Then, shape the dough into small balls and set aside. 4. Make the date filling: in a food processor place pitted dated and cinnamon. Process until smooth paste forms. Shape into small balls and set aside. 5. Make the pistachio filling: place pistachios, sugar and cinnamon into the food processor and pulse for 10-15 seconds, add butter and rose water, pulse for 10 seconds more. Shape the mixture into small balls. 6. How to assembly maamoul cookies: Press a ball of the dough into a flat shape, place the filling ball on the flattened dough, wrap the filling with the dough and roll into a smooth ball. If you making the chocolate maamoul, just place a 1-2 teaspoons of chocolate spread int the middle. 7. Press the filled dough into a maamoul mold, then release gently from the mold. If it's too sticky flour the mold before using. 8. Arrange all the cookies on a baking tray lined with parchment paper. Refrigerate for 30 minutes. 9. Preheat oven to 180C (350F). 10. Bake for 20 Minutes until the cookies are very slightly golden. 11. Dust generously with powdered sugar. Allow to cool before serving. #cookies #maamoul

Hello everyone, so today I am sharing one of the most famous Easter cookies in the Middle East. It is called Maamoul. It's almost like shortbread cookies. Taste so good and it melts in your mouth. Thank u so much for watching and have a great day, God bless you all 💖 Maamoul Recipe Ingredients 3 cups of semolina # 2 (you can use coarse as well #3) 1/2 cup AP flour 1 cup melted butter 1/4 tsp instant dry yeast 1/2 cup plus 1 tbsp rose water Filling: 1 cup chopped walnuts 1/3 cup of sugar 1/2 tbsp cinnamon Powder Sugar for dusting Instructions: Mix Semolina and butter together making sure all the semolina is coated with the butter. Cover and let it rest for 1hr. Longer you leave it will be better. Make the filling, mix walnut and sugar with cinnamon and set aside. After the hour, add the flour, yeast and gradually add the rose water until the dough is soft and pliable. Take a ping pong size dough, make a well in the centre with your finger, place a tbsp of the filling and shape it, if you have a mold use it if not just shape it with a spoon. Place the cookies on a lined baking sheet and bake at 350 deg for 15-18 min. Remove cookies and transfer to cooling rack and sprinkle icing sugar while hot. Homemade Traditional Maamoul are cookies that are stuffed with Dates and nuts. They are popular all over the Middle East and are commonly served during religious festivals such as Eid, Easter and Hanukkah. Today I'll show you how to make the cookie dough as well as three delicious fillings Walnut, Pistachio and Date. I'm Obi from Middle Eats and I'm on a mission to show you how to cook delicious food from across the Middle East. Leave a comment with any recipe requests you'd like to see me cook. For 42 Cookies: Dough ingredients: 500g (17.5 oz) fine semolina 250g (8.75 oz) clarified butter/ghee or about 300-350g (10.5-12.25oz) butter to make this 150ml (5 fl oz) orange blossom water 1 Tbsp mahlab Pinch of salt 1. Add mahlab to semolina and mix until combined 2. Add clarified butter (must have let this cool completely) and massage into the semolina until incorporated and uniformly yellow. Cover and leave to rest overnight 3. Rework the mixture until it starts to come together 4. Add the orange blossom and salt then knead until fully absorbed, it forms a soft dough after about 5 mins. 5. Cover and let it rest for ~30 minutes before using Syrup (for the fillings): 100g (3.5 oz) Sugar 50g (1.75 oz) Water Squeeze of lemon juice 1. Add sugar, water and lemon juice to a pot on medium heat 2. Swirl the pot a couple of times and let it come to a boil 3. Once the sugar has dissolved turn the heat down to low and simmer for 5 minutes For the Walnut filling: 150g (5.25 oz) Walnuts 1 Tbsp caster sugar 1 Tbsp light brown sugar 3 Tbsp Syrup or you can use honey Splash rose water/orange blossom (optional) 1/2 Tsp cinnamon 1/2 Tsp mahlab 1/8 Tsp cloves 1/8 Tsp mace 1/8 Tsp cardamom You can toast your walnuts before hand for added flavor 1. Chop the walnuts into small chunks about the size of a grain of rice or two. Use a knife or food processor for this. 2. Add the walnuts to a bowl as well as the sugar and spices, mix to combine 3. Add the syrup (must have let this cool completely) and mix until it starts to clump together. Add more syrup if necessary For the Pistachio Filling: 150g (5.25 oz) pistachios 3 Tbsp sugar 3 Tbsp honey/thick syrup Splash rose water/orange blossom (optional) You can toast your pistachios before hand for added flavor 1. Chop the pistachios into small chunks about the size of a grain of rice or two. Use a knife or food processor for this. 2. Add the remaining ingredients and mix until it starts to clump together. Add more syrup if necessary For the Date Filling 200g (7 oz) Date Paste or Pitted Dates 20g (0.7 oz) Clarified Butter 1. Add the ingredients to a mixing bowl and massage by hand until combined Note: If you are using pitted dates, check out my Kahk video for directions on how to make the filling Egyptian Kahk Recipe - Eid Cookies- كحك العيد To assemble the cookies: 1. Portion the dough out into 20g balls and roll each ball in your hands till smooth 2. To fill the Maamoul, make an indentation in your dough ball and add a teaspoon of filling into it 3. Use your fingers to press the dough around the filling and seal into a ball once more 4. Roll in your hands until smooth once more 5. Place the dough ball into a Maamoul mould and press down to imprint 6. Smack your Maamoul mould onto a surface at an angle to get the formed Maamoul to drop out To cook: 1. Evenly space on a grease proof paper lined tray 2. Bake in an oven preheated to 200c or 392f for 12 minutes total, rotating it fully at the 6 minute mark 3. Remove and let them cool on the tray for 15-30 minutes before dusting with powdered sugar 4. Serve and enjoy Instagram: 🤍

Along with other middle eastern cookies like Kahk, these cookies are made in huge quantities during festive days to celebrate and share with neighbors and guests. Get the nutritional information, printable recipe, and tips: 🤍 _ For the first stage: ▢ 2 cups (350g) semolina. ▢ 1 cup (125g) all purpose flour. ▢ 1/2 Tablespoon ground mahleb. Note1 ▢ A dash of salt. ▢ 1 cup (250g) ghee. Note2 For the second stage: ▢ 1 Tablespoon dry milk. ▢ 1/4 teaspoon active dry yeast. ▢ 3 Tablespoon simple syrup. Note3 ▢ 1/4-1/3 cup warm milk. Date filling: ▢ 1 cup (150g) dates. ▢ 1 teaspoon ghee. ▢ 1 Tablespoons cinnamon or rose water or orange blossom water. ▢ 1 Tablespoon roasted sesame seeds. Pistachio filling: ▢ 1 1/4 cup (150g) pistachios. ▢ 1/2 Tablespoon powder sugar. ▢ 2 Tablespoons simple syrup. ▢ 1/2 teaspoon ghee. Walnut filling: ▢ 1 1/2 cup (150g) walnuts. ▢ 1/2 Tablespoon powder sugar. ▢ 1/2 teaspoon cinnamon. ▢ 2 Tablespoons simple syrup. ▢ 1/2 teaspoon ghee. Instructions: First stage Melt ghee in microwave or stovetop but do not let it get too hot or boiling. In a deep semolina, flour mahleb, salt and mix. Pour in the melted ghee and mix well. Use the palms of your hands and rub the semolina mixture for a couple of minutes. Cover and refrigerate overnight or up to 3 days. Second stage: Take the dough out of the fridge and allow it to come to room temperature to soften as it might harden in the refrigerator. Add dry milk, yeast and mix well. Mix in the syrup then add the milk little by little until you feel the dough is soft and rolls nicely into a ball. Cover and let it rest for 1 hour. Divide the dough into 24 balls. Preheat oven to 350F Make the fillings: In your food processor combine the ingredients of each filling and process to desired texture. Note4 Divide the filling(s) into 24 balls. Shape and bake maamoul: With your thumb make a dent in each dough and fill with any of the stuffing suggested. Close and roll into a ball. Press into a maamoul mold or flatten a bit and make some marks with a fork in a decorative way. Bake on the middle rack for 10. Minutes then move up for another 7-10 minutes until top is lightly golden. Let it cool down on the baking sheet for 3-4 minutes then transfer to a wire rack to cool completely. IG: 🤍makedelicioushappen TikTok: 🤍makedelicioushappen Maamoul Date Cookies My favourite combination for this special Eid cookie is using half flour and half semolina - it results in the best melt in your mouth cookie! 4 cups fine semolina 4 cups all purpose flour 3 cups melted ghee/butter/Crisco (yellow box) 1 tsp salt 1 cup powdered sugar 2 tsp instant yeast + 1 tbsp sugar + 1 & 1/3 cup warm (to the touch) milk (add all of these in its own small bowl) 1 tsp mastic, grind with ½ tsp granulated sugar 1.5 tbsp ground mahlab 1.5 tbsp rose water 1.5 tbsp kaek (or called Maamoul) spices (store bought) 2 kg date paste 2 tbsp cinnamon 2 tbsp olive oil (or more as needed to help with stickiness) 🔸Add the first 5 ingredients in a large container (with a lid) and knead it through with your hand until everything is soaked well. 🔸Cover it tightly, and store at room temp for 24 hours. 🔸Come in at least once during the 24 hours, and and massage the dough, crumbling it up to further knead the fat through 🔸Next day, add the rest of the ingredients, and knead it until well combined 🔸Since this is a yeasted dough, cover it, and let it rest while you work on the date paste 🔸Make date balls; about a tbsp and a half size 🔸Ball up about tbsp and a half of dough, flatten it out in to a “patty” and wrap the dough around the date ball, making sure to not have any exposed dates 🔸Use your desired Maamoul molds to shape, place them on a sheet pan with parchment 🔸Bake at 350 F for about 12-13 mins. The tops shouldn’t have too much colour as it can turn dry 🔸While a tad bit warm, dust powdered sugar on top so the sugar sticks. Let them cool completely. 🔸Store at room temp for 3-4 days 🔸Makes about 75-80 cookies

Ma’amoul Date & Pistachio Cookies My favourite combination for this special Eid cookie is using half flour and half semolina - it results in the best melt in your mouth cookie! We only make this special treat on our 2 Eid’s and it’s aroma that fills the house screams nostalgia for me. A labour of love but so worth it! For the batter: 4 cups fine semolina (farkha) 4 cups all purpose flour 3 cups melted vegetable ghee 1 tsp salt 1 cup powdered sugar Next day add: 2 tsp instant yeast 1 + 1/3 cup lukewarm milk 1 tsp mastic, ground with ½ tsp granulated sugar 1.5 tbsp ground mahlab 1.5 tbsp rose water 1.5 tbsp kaek (or called Maamoul) spices (store bought) For the date filling: 1 kg date paste (2 kg if all the cookies will be dates) 2 tbsp cinnamon 2 tbsp olive oil (or more as needed to help with stickiness) For the pistachio filling: 2.5 cups whole pistachios, unsalted & roasted 3-4 tbsp simple syrup 1 tsp rose water Add the first 5 ingredients in a large container with a lid and knead it through with your hand until everything is soaked well. Cover it and store at room temperature overnight. Come in at least once during the 24 hours and knead/massage the dough. Crumbling it up to further knead the fat through. Next day, add the rest of the ingredients, and knead it until well combined. Since this is a yeasted dough, cover it, and let it rest while you work on the date paste and pistachio filling. Make date balls, about a tbsp in size. For the pistachio, in a small food processor grind the whole pistachio with prepared simple syrup (check out my reels for how to make this) and rose water until it comes together to create a ball. To assemble ball up about tbsp and a half of dough, flatten it out in to a “patty” and wrap the dough around the date ball, making sure to not have any exposed dates. Use your desired Ma’amoul molds to shape, place them on a sheet pan with parchment. For the dates it is usually a circle shape, for the pistachios it is usually an elongated shape to distinguish the fillings. Bake at 350 F for about 13 mins until golden on the bottom. Optional to broil for more colour, but to keep them super tender I don’t. While a tad bit warm (so it sticks), dust powdered sugar on the pistachio ma’amoul. Let them cool completely before storing. Store at room temp for 3-4 days. Makes about 80 cookies.

Ingredients for Maamoul Semolina - 3 cups Butter - 1/2 cup Oil - 1/4 cup Milk - 1/2 cup All-purpose flour - 1 1/2 cup Sugar - 1 cup Cardamom powder - 1 Tsp Baking Powder - 1 Tsp Salt Vanilla Essence Yeast - 1 tsp + Sugar - 1 tsp + Milk (warm)- 1/4 cup Method 1. Mix in semolina, melted butter, oil and all purpose flour mix and cover and rest it overnight. 2. Next day mix in All-purpose flour, powdered sugar, baking powder, cardamom powder and salt. 3. Add in milk, Vanilla, Yeast mixture and mix and rest for again 1 hour. 4. Make dates filling with deseeded dates, powdered pistachio and ghee. Make Balls. 5. Make pistachio filling with powdered pistachio, sugar and water and make balls. 6. After 1 hour, make balls with semolina mixture add a dates balls inside and cover and press it in maamoul mould. 7. Bake it in the 230-degree preheated oven for 10 - 15 minutes. 8. Sprinkle some powdered sugar.

بسم الله والصلاة والسلام على رسول الله #حلويات_العيد #معمول اقدم لكم وصفتي الخاصة لاعداد معمول العيد بالطحين كل من ذاقها اخذ وصفتها مني 🥰 المكونات 2 كوب زبدة = 420 جرام 1 كوب سكر بودرة = 150 جرام 1 كوب زيت نباتي = 250 ملي 1 كوب حليب بودرة 2 بيضة فانيلا بودرة او سائلة المتوفر عندكم 1 كيلو دقيق = 6 ونصف كوب دقيق نصف ملعقة صغيرة بيكنج باودر للحشو 1 ونصف كيلو عجوة او معجون تمر نصف ملعقة صغيرة قرفة 4 ملعقة كبيرة زبدة او زيت الملاحظات نخفق الزبدة مع باقي المكونات بنفس الترتيب داخل الفيديو نستخدم بيض حجمه كبير ولو كان صغير نشيل من الدقيق ربع كوب نضيف الدقيق ونقلب الى ان يمتزج داخل الزبدة نبدأ نعحنها بايدينا قليلا نغطيها ونتركها ترتاح ربع ساعة ثم نبدأ نشتغل فيها نستخدم قال معمول بلاستيك وافضل شيئ الكبس حتى ما تلصق العجينة ندهن القالب زيت اول مرة ولو لزقت العجينة فيه اعجنيها بايدك وارجعي اكبسيها ما بيصرلها شي اهم نقطة هي الخبز ننزل الشبكة اخر رف ونسخن الفرن على 200 ندخل الصينية ونحسب ربع ساعة ثم نشغل الشواية لتحمير الوجه قليلا ممكن تاخذ وقت اطول من ربع ساعة حسب فرنك تفقديها من اسفل وشوفي اللون المناسب طلعيها وبس تبرد نعبيها في علب محكمة الغلق الكمية اعطتني 2 ونص كيلو معمول الطعم بجد احلى من معمول حلواني وهش جدا جدا اتمنى منكم تجربوه اتمنى ذكر المصدر عند نقل الطريقة اعزائي #سفيرة_الطبخ هنا الوصفة المعدلة للمعمول بالسمنة وبالاكواب وبدون مضرب كهربائي 🤍 تابعوني على انستجرام 🤍 وصفحتي على الفيس 🤍 Ingredients 2 cups butter = 420 grams 1 cup of powdered sugar 1 cup vegetable oil 1 cup of powdered milk 2 eggs Vanilla powder or liquid available with you 1 kilo flour 1/4 teaspoon baking powder For stuffing 1 and a half kilos of paste dates Half a teaspoon of cinnamon powder 4 tablespoons of butter or oil

Para você que está fazendo o RAMADAN, este doce é uma excelente opção para as festividades. * Observação: No vídeo apareço colocando metade da manteiga, e na edição falhamos em não mostrar o momento em que coloco o restante da manteiga, totalizando 500gr , conforme segue a receita abaixo. INGREDIENTES: - 750g de Semolina; - 250g de Farinha de trigo; - 500g de Manteiga derretida(morna); - 200ml de Água (temperatura ambiente); - 1 Colher de chá de fermento biológico; - 50ml de (Ater) calda de açúcar; - 150g de Açúcar de confeiteiro; - 2 colheres de sopa de Água de rosas ou flor de laranjeira (pode usar os 2 se quiser). MA'AMOUL - DATE FILLED MIDDLE EASTERN COOKIES‼️ 🍪🇵🇸😋 Buttery date filled semolina cookie 😍 Subtly scented with orange blossom, so decadent it scrumptiously melts in your mouth 👅 The best thing to have on #EID‼️ 🙌🏽 #eidmubarak to all my Muslims ☪️ #dessertbae ❤ 💥INGREDIENTS💥 - 1 ⅓ cup semolina - ¼ cup sugar - ⅓ cup all-purpose flour - ⅔ cup coconut oil at room temperature - ⅔ lb dates medjool, soft, pitted, chopped (or ready made date paste) - ¼ cup unsweetened almond milk or other plant-based milk - 1 tbsp orange blossom water (we used Sadaf) - 1 ½ tbsp agave nectar, maple syrup or sugar - 3 tsp orange blossom water - Confectioner's sugar ✨INSTRUCTIONS✨ - Combine semolina, flour, sugar and coconut oil. Mix well using your hands until the coconut oil is well incorporated ( it should look like coarse cornmeal at this point) - Slowly add almond milk and orange blossom water and keep working with your hands until it forms a smooth dough. ( it should feel like a fresh pack of Play-Doh) Don't skip the orange blossom water, it is what gives Ma'amoul its characteristic Middle Eastern flavor. - Let it rest for about 20-25 minutes at room temperature. - Take a dough ball and flatten it. Hold it in the center of your palm and cup it. Place a date ball in the center. Bring the edges of the dough together. Pinch the dough to seal well and then smoothen it out. Press it into a disc. Tip: Make sure to not use too much filling, or the cookies will crack. - Press the date filled cookie dough into a traditional Ma'amoul mold and gently press to get the - If you do not have a Ma'amoul mold you can simply form the Ma'amoul and lightly flatten them with the palm of your hand. You can also decorate them, by making some marks with a fork - If the dough is too soft to shape and work with, place it in the fridge for 10-15 minutes. This may happen in the summer months or if your kitchen is hot. - Make sure to space them one to two inches apart on the baking sheet. Bake for 15 to 20 minutes.
